Ingredients
- 1 Tbsp dried Oregano
- 2 tsp smoked paprika
- 2 tsp ground cumin
- 1 tsp garlic powder
- 1 tsp salt
- 1 tsp onion powder
- 1 chicken about 7 lbs
- 1 onion finely chopped
- 1 Tbsp oil
Preparation
Step 1
Preheat oven to 375. In small bowl combine oregano, paprika, cumin, garlic and onion powders and salt; reserve.
Fill chicken cavity with onion. Pat chicken skin dry and rub with oil. Sprinkle oregano mixture all over skin.
Place chyicken in large roasting pan. Roast chicken 1 hour, 45 min to 2 hours until done 170 degrees into thickest part of thigh away from bone.
Let stand 10 min before carving.
