Creamed Spinach

Old-fashioned creamed spinach is highly nutritious and complements a multitude of entrees. Excellent with roasted meats or root vegetables.

Ingredients
- 2 10 oz. packages frozen chopped spinach-thawed, drained well
- 3 T. unsalted butter
- 1 T. chopped garlic
- 3/4 c. finely chopped yellow onion
- 3/4 c. heavy cream
- 1/2 c. Parmigiano-Reggiano cheese, grated
- Pinch ground nutmeg
- 1/2 t. salt
- 1/4 t. ground black pepper

Step 1
Melt butter in a saucepan over medium heat and add garlic and onions. Cook until onions are translucent and soft (about 10 to 15 minutes). Add cream, Parmigiano-Reggiano, nutmeg, salt and black pepper and continue cooking until it is reduced a bit (about 5 minutes). Add spinach to cream and mix well. Continue to cook until cream has almost completely been absorbed and dish is thick and creamy. Remove from heat and serve.
