Ingredients
- 3/4 cup sugar for caramelizing
- 1 cup whole milk
- 1 cup half n half
- 5 eggs, separated
- 1 cup all purpose flour
- 1 cup sugar
- Dash of salt
- 2 Tablespoons butter
- 1/4 teaspoon vanilla
Preparation
Step 1
Mix together flour, 1 cup sugar and dash of salt; set aside. Separate eggs; save egg whites for meringue. Beat egg yolks and add milk and half n half together. Add to flour and sugar mixture.
Over low heat, melt ¾ cup sugar until caramelized. While waiting, bring egg/flour mixture to a slow boil over medium heat. (Stir constantly to avoid mixture from getting lumpy). Add the caramelized sugar only three tablespoons at a time and mix thoroughly. Pour into baked pie crust.
Wait until pie has cooled completely before toping with meringue.
