Swordfish and Basil Croquettes

Ingredients

  • 400 g/14 oz swordfish,
  • 2 slices white bread,
  • 100 ml/3 1/2 fl oz reduced fat or single cream,
  • 5 g/1/4 oz fresh basil,
  • Salt,
  • White pepper,
  • 1 egg,
  • 100 g/3 1/2 g plain flour,
  • 20 ml/1/2 fl oz extra virgin olive oil

Preparation

Step 1

Flake the swordfish; add the oil, salt, white pepper and bread, which you first soaked in the cream.

Knead the ingredients together, add the chopped basil, and form croquettes, each about 60 g/2 oz. Coat each lightly with flour.

Pour the oil in the ActiFry and heat for 3 minutes, then add the croquettes and cook for about 12 minutes.
