Cornmeal Bread

Ingredients

  • 1/2 c cornmeal
  • 1 c boiling water
  • 1 tsp salt
  • 2 pkg yeast
  • 1/2 c water (105-115')
  • 1 TBS sugar
  • 1 c warm milk
  • 2-3 tsp salt
  • 1/4 c dark brown sugar
  • 4-4 1/2 c flour

Preparation

Step 1

Pour meal into boiling water with salt. Cook til thick (4 min). Cool in a large bowl. Proof yeast in water and sugar for 5 min. Pour into meal mixture. Mix well.
Add milk, salt, brown sugar, and flour 1 cup at a time. When dough pulls away from the side of bowl knead for 10-12 min. Butter a large bowl then place dough turning to coat top. Cover until double in size. Punch down, cut in half. Shape into loaves. Rest while you butter pans. Place loaves (covered) to rise until double (level with top of pan).
Bake at 425' for 10 minutes then lower to 350 for the last 20-25 miutes.
Without bread pans place baked loaves on oven rack for a few minutes to crisp the crust.
