Ingredients
- 1 c olive oil
- 1/2 c cider vinegar
- 1/2 c sugar
- 1 red pepper
- 1 yellow pepper
- 1 green pepper
- 1/2 purple onion
- 2-3 stalks celery
- 2 jalapeño peppers
- 1 can pinto beans
- 1 can black-eyed peas
- 1 can whole kernel corn
Preparation
Step 1
Boil olive oil, vinegar and sugar and then cool. Chop up peppers, onion, and celery into small pieces. Add veggies, beans and corn after draining into oil mixture. Marinate overnight. Drain oil mixture. Serve with chips.
Note: Any combination of beans works.
