Zucchini Brownies

Ingredients

  • 3/4 c. oleo
  • 2 T. hot water
  • 1 2/3 c. brown sugar
  • 2 eggs
  • 2 c. flour
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 1 1/2 to 2 c. shredded zucchini
  • 1 c. chopped nuts
  • 1 c. butterscotch chips

Preparation

Step 1

Melt shortening over very low heat with hot water, add sugar and beat well to cool. Add eggs and vanilla; beat again. Add to all dry ingredients above. Stir in zucchini and nuts into batter. Mix well. Bake in 9 x 13-inch pan. Sprinkle chips on top of batter. Bake at 350 degrees for 35 to 38 minutes. Cool; cut in squares.
