Ingredients
- Marinade:
- 2 pounds shrimp
- 1 cup orzo
- 1/2 cup olive oil`
- 1 teaspoon pepper
- 2 teaspoons salt
- Juice 1/2 cup from fresh lemon--I added a little more
- 1/2 red onion chopped fine
- 1 large cucumber and skin chopped
- 1 package reduced fat feta
Preparation
Step 1
Roast shrimp in sea salt, pepper & olive oil
Cook 1 cup Orzo slowly, drain and cool
Mix marinade, then pour mixture over shrimp and Orzo.
I put in ziplock bag so I could rotate to mix.
Marinate in refrigerator 2-3 hours.
