Scrambled Eggs with Raw Spinach and Tomatoes

Here's a recipe that will get the whole family eating spinach!

Ingredients

  • 3 eggs,
  • 120 ml/4 fl oz reduced fat cream or single cream,
  • 1 Actifry spoonful extra virgin olive oil,
  • Fine sea salt,
  • 40 g/1 1/2 oz young spinach leaves,
  • 16 cherry tomatoes

Preparation

Step 1

Break the eggs into a large bowl and add the cream and saltl.

Pour the oil into the ActiFry and heat for about 3 minutes; then add the salted egg and cream mixture. Cook for about 4 minutes.

Cut the tomatoes into small pieces. Season with salt. Add the spinach.

Put the scrambled eggs onto a serving dish and add the spinach and tomato salad.
