Ingredients
- 1 can chicken broth, (14-1/2 ounces)
- 1 can tomato paste, (6 ounces)
- 1 lb. boneless skinless chicken breast halves, cut into 1" cubes
- 2 cups potatoes, peeled and cubed
- 1 small onion, chopped
- 1 celery stalk, sliced
- 2 medium carrots, sliced
- 1/2 teaspoon paprika
- 1/4 teaspoon pepper
- 1/4 teaspoon dried thyme
- 1 1/2 tablespoons water
- 1 tablespoon cornstarch
Preparation
Step 1
1. In a crock pot, combine the chicken broth and tomato paste. Add next 8 ingredients and stir to mix well. Cover and cook on high heat for 3-1/2 to 4 hours, or on low heat for 7 to 8 hours.
2. Mix water and cornstarch in small bowl; stir until smooth. Stir into stew. Cook, covered, for 30 minutes more, or until thickened. Yield: 4 servings.
