Ingredients
- Filling:
- 2 1/2 to 3 c. flour
- 1 c. sugar
- 3 tsp. baking powder
- 1/2 tsp. salt
- 1 egg
- 1/2 c. lard
- 1/2 c. milk
- 1 tsp. vanilla
- 1/2 c. sugar
- 1/2 c. water
- 1 tsp. lemon juice
- 1 T. cornstarch
- 1 c. raisins, cooked
- 1 c. coconut
Preparation
Step 1
Sift together 2 1/2 cups flour, sugar, baking powder and salt. Add egg, milk, lard and vanilla. Mix well. Add additional flour to make dough stiff enough to roll without sticking. Roll thin and cut with 2 1/2-inch cookie cutter. Put 1 teaspoon filling on cookie and cover with another cookie. Press edges together.
Filling: Combine sugar and cornstarch. Add water and lemon juice until thick. Add raisins and coconut. Bake at 400 degrees for 12 minutes.
