Chicken Cacciatore Crock-Pot

Ingredients

  • 3 lbs. chicken breasts or chicken pieces
  • 2 cloves garlic, crushed
  • 1/4 cup olive oil, or canola oil
  • 1 teaspoon salt
  • pepper
  • 1 teaspoon paprika
  • 2 teaspoons oregano
  • 1/2 teaspoon basil
  • 1/2 teaspoon rosemary
  • 1 onion, minced
  • 1 can stewed tomatoes, or diced tomatoes
  • 1/4 cup sauterne wine, (or chicken broth)

Preparation

Step 1

Brown chicken in oil and garlic, drain.

Put chicken in crockpot first, then everything else on top. Cook 4 to 6
hours on low.
If you have used chicken with the skin on you may need to skim fat off surface of sauce.
Take chicken out of sauce and debone, return meat to pot. Sometimes you may have to thicken sauce in that case add some tomato paste to sauce, pour into stove safe pan and heat on medium high to reduce sauce if necessary.

Serve with buttered pasta.
