Take Along Black Bean Hash

Ingredients

  • 1 large or 2 med. onions, chopped
  • 6 garlic cloves, minced
  • 2 large p0tato, cut into 1-inch chunks
  • 2 small bell pepper, chopped or 1 jar of roasted red peppers
  • 1 28 oz can diced tomatoes
  • 1 tablespoon chili powder (mild)
  • 1 tablespoon chipolte chili powder (med heat)
  • 1 teaspoon cumin
  • 2 (15-oz) can black (or other) beans, rinsed
  • 3 cup sweet corn, fresh or frozen
  • 3 cups frozen edamane beans
  • 1 cup water

Preparation

Step 1

Place all the ingredients into the pressure cooker. Stir ingredients together.

Set cooking mode on “Manual” for high pressure. Adjust time down for 3 minutes.

When cooking is done, use either natural release or quick release method to release pressure from pot.
