Mango, Papaya, Cucumber and Red Onion Salad

A colourful salad with a gentle vinaigrette. Include avocado, if desired. Serve with the Spiced Chicken with Curry Coconut Sauce.

Ingredients
- Citrus Dressing:
- 1 large mango
- 1 large papaya
- 2 cups (500 mL) English cucumber; seeded
- 1 small red onion
- 2 tbsp (25 mL) cider vinegar
- 2 tbsp (25 mL) fresh orange juice
- 1 tsp (5 mL) grated orange rind
- 1 tbsp (15 mL) Dijon mustard
- 1 tbsp (15 mL) honey
- ½ cup (125 mL) vegetable oil
- 2 tsp (10 mL) poppyseeds
- 2 tbsp (25 mL) chopped fresh mint
- 1 bunch watercress

Preparation
Step 1
1. Peel mango and papaya and cut into 1-inch (2.5-cm) dice. Cut strips from cucumber skin in 1-inch (2.5 cm) sections. Dice into 1-inch (2.5-cm) dice. Dice red onions into ½-inch (1-cm) dice. Combine together in a bowl.
2. Whisk together vinegar, orange juice, rind, mustard and honey. Slowly whisk in oil. Stir in poppyseeds and mint. Toss with fruit, cucumber and onion.
3. Lay watercress on a platter and top with salad. Serve with the spiced chicken.
