Beef Ole

Ingredients

  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1/2 c. shallots, chopped
  • 1/4 c. soya sauce
  • 1/4 tsp. pepper
  • 2 lbs. beef, cubed
  • 3 tbsp. oil
  • 1/3 c. brown sugar
  • 2-4 whole chili peppers, chopped
  • 2 green bell peppers, diced
  • 6 large carrots, cut into sticks
  • 4 c. tomato juice
  • 3 c. quick cooking rice

Preparation

Step 1

1. In a bowl, mix first 5 ingredients.
2. Add beef cubes.
3. Marinate in refrigerator 30 mins, stirring from time to time.
4. Remove from refigerator. Drain.
5. In large pot skillet, heat oil. Add beef. Sprinkle with brown sugar. Brown beef cubes all over.
6. Add enough water to cover meat. Fold in remaining ingredients, except rice. Cover.
7. Cook for 1 hour or until beef is tender. Add rice. Cover. Simmer 15 minutes. Serve.

Can replace beef with chicken.
