Bite-Sized Polenta Squares

Ingredients

  • 2 T. olive oil
  • 1/4 onion, finely chpd
  • 2 1/4 c chicken stock
  • 3/4 c polenta
  • 1/2 c sun-dried tomatoes, oil-packed and chopped
  • 1 T. flat leaf parsley, chpd
  • 1 tsp fresh thyme, minced
  • salt & freshly ground pepper
  • 2 oz goat cheese, cut into 1/2"

Preparation

Step 1

Lightly oil 8" square baking dish. Heat 2 T oil in large saucepan, add onion and saute until golden, about 5 min. Stir in chicken stock and bring to a boil. Whisking constantly, gradually add polenta. Lower heat to medium and cook stirring constantly for 10-15 min or until polenta thickens and comes away from sides of the pot.

Stir in sun-dried tomatoes, parsley and 1/2 tsp thyme, season with salt and pepper to taste. Pour into prepared dish and smooth top with rubber spatula. Set aside to cool completely.

To serve, cut polenta into 1" squares. Top each square with small piece of goat cheese and garnish with a little extra thyme.
