Ingredients
- TOPPING:
- 3 cups cooked mashed sweet potatoes
- 1/2 cup sugar
- 2 eggs, beaten (or 1/2 cups
- egg substitute)
- 1/2 teaspoon salt
- 1/2 stick butter, melted
- 1/2 cup milk
- 1/2 teaspoon pure vanilla
- 1/2 cup brown sugar
- 1/2 flour
- 1 cup chopped pecans
- 1/3 cup butter, melted
Preparation
Step 1
Mix potatoes, white sugar, eggs, salt, 1/2 stick melted butter, milk & vanilla in large bowl. (I just mix it all in the casserole dish) Spoon into 1 1/2 quart casserole. Mix topping mix & sprinkle evenly over potato mixture. Bake at 350° for 35 minutes. Recipe doubles nicely
NOTES : I love this stuff, but don't make it all that often (only on holidays), since it is so sinfully rich! Enjoy!
