Ingredients

  • Peanut Butter Frosting:
  • 1 cup Butter, softened
  • 3/4 cup Creamy peanut butter
  • 3 cups Granulated sugar
  • 2 tsp Vanilla extract
  • 5 Eggs
  • 3 cups All-purpose flour
  • 1/2 tsp Baking powder
  • 1/2 tsp Salt
  • 1 cup Milk
  • In saucepan over low heat, melt 1/2 cup each, peanut butter and light corn syrup.
  • Stir in 2 cups powdered sugar, 1 tablespoon milk, and 1 teaspoon vanilla, mix until smooth.

Preheat oven to 350 degrees F., grease and flour a 10-inch tube pan.
In a large mixing bowl, combine the butter, peanut butter, sugar and vanilla, beat until light and fluffy. Add the eggs one at a time, beating well after each addition.

In another bowl, combine the flour, baking powder and salt; stir into butter mixture alternately with milk. Pour peanut butter batter into prepared pan. Bake Double Peanut Butter Pound Cake until a wooden pick inserted in center comes out clean.

Cool in pan 15 minutes on a rack. Remove from pan. Cool completely on wire rack before drizzling with Peanut Butter Frosting. To decorate, sprinkle peanut butter pound cake with chopped peanuts.
