Tomato Tortellini Soup

No one will guess that you cheated by using canned tomato soup. This lovely soup tastes homemade all the way! —Sandra Fick, Lincoln, Nebraska

Ingredients

  • 1 package (9 ounces) refrigerated cheese tortellini
  • 2 cans (10-3/4 ounces each) reduced-sodium condensed tomato soup, undiluted
  • 2 cups vegetable broth
  • 2 cups milk
  • 2 cups half-and-half cream
  • 1/2 cup chopped oil-packed sun-dried tomatoes
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/2 cup shredded Parmesan cheese
  • Additional shredded Parmesan cheese, optional

Preparation

Step 1

Cook tortellini according to package directions.
Meanwhile, in a Dutch oven, combine the soup, broth, milk, cream, tomatoes and seasonings. Heat through, stirring frequently. Drain tortellini; carefully add to soup. Stir in cheese. Sprinkle each serving with additional cheese if desired.

Love this recipe but I added Italian sausage and spinach to die for

I've made this recipe several times and my whole family loves it. I doubled the tortellini but left the rest of the recipe alone. It is creamy, savory and just delicious. Served with french bread it makes a great and simple dinner.

I am making this recipe a 2nd time tonight - which means it gets added to my "favorites" book. Like other reviewers, I replaced the sun dried tomatoes with canned diced tomatoes. Very yummy and unique soup and its just as good reheated as leftovers.

This is a yummy tomato soup that has chunks of tomatoes, and big cheese tortellini in it. Not too think, but very warming. Easy too! We'll be making this one again.

Very easy and quick to make. Made this soup for lunch and it is creamy and hearty! Tastes good reheated if you have leftovers!

I used a can of diced tomatos (drained) instead of the sundried and chicken broth instead of vegetable broth. Also added a can of tomato sauce because I thought it needed more tomato flavoring. Excellent!

this was soo good.. i used regular sundried tomatos because i thought the oil packed ones where expensive and used a whole package of frozen tortellini. to the people who think its a lot of liquid... its a soup not a stew or sauce what did u think it was going to be like...next time i am going to add some frozen spinach

I liked this and it was certainly easy to make. I will add more Italian seasoning or something the next time I make it because I like things a little more spicy. But it was definitely a good start.

I made this yesterday for the first time, and both my husband and I loved it! Next time I will probably try using extra tortellini, but the soup itself is outstanding, even without the tortellini. Great recipe and one I will be keeping for years!

I would have given it 2 stars because this did not impress me at all. I felt there was way too much milk/cream and I didn't use as much as the recipe calls for. The tomato soup-iness of it clashed with the tortellini. I would suggest using less milk and a different pasta like macaroni or something without filling.

I gave it a 3 because it went over well with my sister and her husband. She loved it and demanded the recipe--one because she thought it was delicious and two because it was quick and easy to make. She, too, recommended less milk/cream.

This soup is so quick and delicious! I picked up Light Cream instead of Half and half so used that. Also....put in FRESH basil because I'm not a fan of dried spices. AWESOME! I would in the future double the tortellini because it does make alot of liquid.

both my husband and I LOVED this! I used a 20-oz package of cheese tortellini, and the broth-to-pasta ratio was perfect. next time I may add another can of tomato soup, just for extra flavor, but it was still amazing!

All I can say is "Oh My GOD".... This has got to be the best Tomato Soup ever made. I was having a luncheon and didn't know that one person didn't like tomato soup. She actually went home with the recipe in hand to make it for her mother..... This is a KEEPER........

I used twice the tortellini called for and it was still way too much liquid. It also did not have much flavor. It could possibly be saved by halving the liquid and adding a whopping spoon of pesto, but I won't make it again.

We made this soup today and it was amazing! It tasted like restraunt quality soup and it was very quick to make. We served garlic bread with it and it was hearty enough to make a mea.

I made this just the other day because I happened to see it online, and it was delicious! I didn't have any vegetable broth on hand, so I used chicken broth, but it was still wonderful! I also used more tortellini than 9 oz. and there was still plenty of soup around the pasta.

For years I have been trying to get this recipe from my favorite Italian restaurant. I love this soup!

This was good, though I made a few changes. I didn't add the dried tomatoes, because I knew my kids would not like them. I threw in a half bag of frozen broccoli instead. I didn't have the cheese to put in, but I really think that would have made it even better. I added some extra onion and garlic powder, and extra salt. Pepper would have been good, too. Yum!

This soup is now one of my all time favorites! Both my husband and I LOVED the flavor of this soup! I forgot to buy sun-dried tomatoes so I chopped up cooked bacon instead - nice subsitute :) I used the sprinkle parm cheese instead of the shredded so I added a little more to help thicken the soup.

This soup was fabulous, tastes like it takes forever to make, but is so simple. It is definitely a keeper!

I used canned garlic-roasted diced tomatoes instead of the sun-dried tomatoes, and it is delicious. Perfect for a cold winter evening.

So delicious and pretty simply to make. Literally takes about ten minutes to put together- and the flavor is so delicious! This is one my husband saw in the magazine and requested that I make it. It didn't disappoint, and is in rotation now.

This is a favorite for me and for the girls in my office!! I shared recipe and they make it over and over. I did add a little more seasoning for my taste, but overall easy and delicious!!
