Ingredients
- Icing:
- 1/2 Cup Shortening
- 1 1/4 Cups Sugar
- 2 Eggs
- 1 Cup Cooked Pumpkin, mashed
- 2 1/4 Cups Flour
- 2 1/2 tsp. Baking Powder
- 1 1/2 tsp. Baking Soda
- 1 tsp. Salt
- 1/2 tsp. Pumpkin Pie Spice
- 3/4 Cup Milk
- 1 Cup Brown Sugar
- 1/2 Cup White Sugar
- 2 Tbs. Flour
- 1 Cup Milk
- 2 Eggs
- 1 Cup Walnuts, chopped
- 1 Cup Raisins
- 1 Cup Coconut
- 1 tsp. Vanilla
- 2 Tbs. Butter

Preparation
Step 1
Cream together shortening, sugar, and eggs. Add pumpkin and mix well. Stir together flour, baking powder, baking soda, salt and pumpkin pie spice. Add dry ingredients to creamed mixture alternately with milk. Mix well and spoon into greased 9 x 13 inch pan. Bake at 350 degrees for 35-40 minutes or until done. Cool. Ton prepare icing combine sugars, flour, milk and eggs in double boiler. Bring to a boil and cook for 20 minutes stirring frequently. Fold in all remaining ingredients and cook 5 minutes longer. Spread frosting over cooled cake and serve.
