Blueberry/ Apple Pie
Chris Pryme.This recipe makes a 10 inch pie. Chris makes a lattice crust,but it could be a double crust.
- Pie crust:
- 2 cups flour, unbleached all purpose
- 3/4 cup shortening
- 1 tsp. salt
- 5-7 T. cold water
- Blueberry Filling:
- 1 quart blueberry pie filling or 2 cans of you favorite filling
- 4 medium apples sliced thin-2 1/2 cups
- 3 T. sugar
- 1 heaping T. flour
- 1/2 tsp. cinnamon
Pie crust; Mix shortening and salt together with your fingers until crumbly. Add water a little at a time so it all comes together. Divide in 2 and roll out. If you want a little more flaky crust, add a little more shortening and less water.
Filling’ Mix apples, sugar, flour and cinnamon together. Fold in pie filling. Fill 10 inch wide pie shell. Bake at 375 degrees for 45 to 55 minutes , it is usually done when it is bubbling on edges and it is a golden brown.
