Spicy Chicken and Ranch Sandwich with Crudités

Ingredients

  • 4 chicken cutlets (3/4 lb. total)
  • Salt
  • 1/4 t cayenne pepper
  • 1 T olive oil
  • 1/2 c Ranch dressing
  • 8 slices of toast
  • Dill pickles
  • Lettuce
  • Crudités

Preparation

Step 1

Season chicken cutlets with salt and Cayenne pepper. Cook in olive oil in a large skillet over medium heat until cooked through, 2 to 4 minutes per side. Spread with ranch dressing, divide evenly on bread, top with the chicken, dill pickles and lettuce. Serve with crudités.
