Ingredients
- 2 T oil, divided
- 1 bunch scallions, chopped
- 1 T grated ginger (less if dried)
- 1 lb. ground beef
- 1/4 c soy sauce
- 1/4 c tomato paste
- 3 T light brown sugar
- 1/4 t Kosher salt
- 1/2 t Pepper, divided
- 1/2 c water
- For Slaw
- 1/2 small head cabbage, thinly sliced
- 2 carrots, grated
- 1/2 c fresh cilantro (less if dried)
- 1/4 c lime juice
- 2 t toasted sesame oil
- 4 hamburger buns
Preparation
Step 1
Heat 1 T oil in large skillet over medium-high heat. Add scallions and ginger and cook, tossing, until softened, 2-4 minutes. Add the beef and cook, breaking it up with a spoon, until browned, 3-5 minutes. Add soy sauce, tomato paste, sugar, 1.4 t pepper and 1/2 c water and cook, stirring until slightly thickened.
Toss together carrots, cabbage, cilantro, lime juice, sesame oil and the remaining oil and 1/4 t each salt and pepper in a large bowl.
Fill the buns with meat, dividing evenly, and serve with the slaw.
