Ingredients
- 1-1/2 cup vegetable oil
- 2 cups white sugar
- 4 eggs
- 1 teaspoon vanilla
- 2 cups sifted flour
- 2 teaspoons baking soda
- 2 teaspoons baking powder
- 3 teaspoons cinnamon
- 1 teaspoon nutmeg or allspice
- 1 teaspoon salt
- 3 cups grated carrots
- 1 cup nuts (optional)
- Cream Cheese Icing
- 1 pkg 4 oz cream cheese
- 1/4 cup butter
- 1 teaspoon vanilla
- 1/2 pound icing sugar

Preparation
Step 1
Cake:
Beat oil and add sugar
Add eggs one at a time, add vanilla and dry ingredients.
Add carrots and nuts.
Mix well.
Pour into greased 9x13 baking pan
Back at 300F for 40 to 50 minutes
Cream Cheese Icing:
Mix together cream cheese, butter and vanilla
Add icing sugar and beat well.
(a little milk may be added)
