Ingredients

    cup vegetable oil

    cups white sugar

    eggs

    teaspoon vanilla

    cups sifted flour

  • 2

    teaspoons baking soda

    teaspoons baking powder

  • 3

    teaspoons cinnamon

    teaspoon nutmeg or allspice

    teaspoon salt

  • 3

    cups grated carrots

  • 1

    cup nuts (optional)

  • Cream Cheese Icing

  • 1

    pkg 4 oz cream cheese

  • 1/4

    cup butter

  • 1

    teaspoon vanilla

  • 1/2

    pound icing sugar

Directions

Cake: Beat oil and add sugar Add eggs one at a time, add vanilla and dry ingredients. Add carrots and nuts. Mix well. Pour into greased 9x13 baking pan Back at 300F for 40 to 50 minutes Cream Cheese Icing: Mix together cream cheese, butter and vanilla Add icing sugar and beat well. (a little milk may be added)
