Ingredients
- 2 tbs plain breadcrumbs
- 1 tbs chopped flat leaf parsley
- 1 tbs chopped chives
- 1 tbs low fat mayo
- 1/2 tsp grated lemon rind
- 1/4 tsp fresh black pepper
- 1 large egg, lightly beaten
- 8 oz. lump crabmeat
- 1 tbs butter
- 1-1/2 tsp canola oil

Preparation
Step 1
Place first 7 ingredients in a medium bowl, stirring to combine. Add crab and toss gently to combine. Chill mixture for 10 minutes. Divide crab mixture into 4 equal portions. With moist hands shape into 1" thick patties.
Heat a medium skillet over medium heat, add butter & swirl until it melts. Add oil & swirl to coat. Add patties to pan, cook 4 minutes on each side until golden brown.
