Ingredients

  • 2

    tbs plain breadcrumbs

  • 1

    tbs chopped flat leaf parsley

  • 1

    tbs chopped chives

  • 1

    tbs low fat mayo

  • ½

    tsp grated lemon rind

  • ¼

    tsp fresh black pepper

  • 1

    large egg, lightly beaten

  • 8

    oz. lump crabmeat

  • 1

    tbs butter

  • 1-½

    tsp canola oil

Directions

Place first 7 ingredients in a medium bowl, stirring to combine. Add crab and toss gently to combine. Chill mixture for 10 minutes. Divide crab mixture into 4 equal portions. With moist hands shape into 1" thick patties. Heat a medium skillet over medium heat, add butter & swirl until it melts. Add oil & swirl to coat. Add patties to pan, cook 4 minutes on each side until golden brown.
