Williamsburg Orange-Sherry Cake

Beautiful cake, especially at Christmas.

Ingredients

  • 1 cup golden raisins
  • 1/2 cup dry sherry
  • 3/4 cup butter, room temperature
  • 1/2 cup brown sugar
  • 1 cup granulated sugar
  • 3 eggs
  • 1 1/2 t. vanilla
  • Zest of 1 orange
  • 2 1/2 cups flour
  • 1 1/2 t. baking soda
  • 1/2 t. salt
  • 1 1/2 cups buttermilk
  • 1/2 cup chopped walnuts or pecans
  • Frosting
  • 1/4 cup butter, room temperature
  • 8 oz. cream cheese, room temperature
  • 1 pound powdeed sugar
  • 2 T. orange liqueur
  • 2 T. orange zest

Preparation

Step 1

1. Soak raisins in sherry overnight.
2. Using an electric mixer, cream the butter and the brown and granulated sugar together in a large bowl. Add the eggs, one at a time, beating well after each addition. Beat in the vanila and the orange zest.
3. Combine the flour, baking soda, and salt. Add alternately with the buttermilk, beating well after each addition. Stir in nuts and raisins with the sherry.
4. Pour the batter into three greased and floured 9" round cake pans. Bake in pre-heated 350 degree oven for 35 - 40 minutes or until toothpick inserted in center comes out clean. Cool cakes in pans for 10 minutes. Invert on wire racks and cool completely. Frost layers and sides with Cream Cheese Frosting.

Cream Cheese Frosting
1. Using an electric mixer, cream the butter and cream cheese. Add the powdered sugar and orange liqueur. Beat until smooth and add the zest. This frosts three layers and sides of cake.
