Ingredients

  • 2 c shredded red cabbage
  • 1 c julienned carrots
  • 1/2 c chopped green onions
  • 1/2 c real bacon bits
  • 1/4 c dried cherries, cranberries or craisins
  • 3 T Garlic EVOO
  • 2 T vinegar (VOMM FASS Vinagre Viejo de Montilla)

Preparation

Step 1

Cook chopped bacon until crisp. Drain on paper towels. Emulsify oil & vinegar. Combine all other ingredients & toss with emulsified oil & vinegar.

Chill for at least 3 hrs. Overnight is better. Taste & add salt & pepper as well as more oil & vinegar to taste.
