Grilled Marinated Portabellos

Eat these like a burger. Carnivores will love them too!

Ingredients

  • 1/2 cup olive oil
  • 3 Tbsp lemon juice
  • 6 cloves garlic, minced
  • 1/4 tsp salt
  • 4 portobello mushrooms, 5-6 inches, stems removed, caps wiped clean

Preparation

Step 1

Combine oil, lemon juice, garlic, ans salt in large ziplock bag. Add mushrooms; seal bag and gently shake to coat mushrooms with marinade.

Let stand at room temperature until seasoned, 1 hour. cut four 12-inch-square pieces of foil (or six 9-inch-square pieces if using smaller mushrooms).

Set grill at medium-hot.

Remove mushrooms from marinade. Put a mushroom gill-side up on foil square; fold foil over mushroom and seal edges. Repeat for all mushrooms. Grill mushrooms, with sealed side of foil packet up, until juicy and tender (10 - 12 minutes for large, 9 for medium mushrooms).

Using tongs, unwrap mushrooms and put them on the grill gill-side up and cook until grill-marked, 30 - 60 seconds.
