Got this recipe from Wegman's Menu book. Made it for a luncheon for my girlfriends and it was a big hit. Not too many ingredients (love that!!). You can use any mushrooms you want and it will be delicious.

Ingredients

  • 1 Pkg puff pastry-thawed
  • 1 lg egg, whisked
  • 1 1/2 cups pan roasted mushrooms (recipe below) finely chopped
  • Preheat oven to 400 degrees.
  • PAN ROASTED MUSHROOMS
  • 2 tbsp olive oil
  • 4 tsp butter
  • 5 oz shitake mushrooms
  • 8 oz sliced baby bellos
  • 8 oz packaged oyster mushrooms divided

Step 1

1. Heat 1 tbsp olive oil in pan on medium High until oil faintly smokes. Add 2 tbsp butter, heat to melt. Add half the mushrooms to pan, toss to coat. Cook without stirring for 5 min until browned. Season with salt and pepper. Toss well and cook 3 min. Continue to toss often, allowing mushrooms to brown, 1 min. Transfer mushrooms to plate. Repeat with second batch of mushrooms.

2. Place chilled pastry on floured surface. Brush entire surface with egg. Cut into 5 long strips and then cut each strip into 6 squares, creating 30 pieces. (Note: A pizza wheel works great for this) Lightly coat mini-muffin pan with cooking spray or butter. Press each pastry, egg wash side UP into muffin cup. Spoon 2 tsp filling in each cup. Bake about 15 minutes, until golden brown. Serve warm.
