Impossible Lasagna Pie

Ingredients

  • lb. extra lean ground beef, (93% lean)
  • 1 cup ricotta cheese, part skim milk
  • 1/4 cup grated parmesan cheese
  • 8 ounces mozzarella cheese, part skim milk, grated
  • 1/2 teaspoon dried basil
  • 6 ounces tomato paste
  • 1 cup skim milk
  • 2 eggs
  • 2/3 cup Bisquick baking mix, reduced fat
  • 1/2 teaspoon salt

Preparation

Step 1

1. Crumble ground beef into pie plate, 10 x 1 1/2 inches. Cover loosely and microwave on high 5 to 6 minutes, until no longer pink. Remove beef drain.
2. Layer ricotta and parmesan Cheeses in same plate. Mix cooked ground beef, 1/2 cup of the mozzarella cheese, dried basil and the tomato paste; spoon evenlyover cheese in pie plate.
3. Beat milk, eggs, baking mix and salt with a hand beater or wire whisk 1 minute or until smooth. Pour evenly over beef. Sprinkle with a little more basil or parsley for looks.
4. Elevate pie plate on inverted dinner plate in microwave oven. Microwave uncovered on medium high (70%) power for 18 to 22 minutes, rotating pie plate every six minutes, until knife inserted in center comes out clean. Sprinkle with remaining mozzarella cheese. let stand 5 minutes.
