Ingredients

  • For the cupcakes:

  • 2 1/2

    cups all purpose flour

  • 1 1/4

    teaspoon ground cinnamon

  • 1/2

    teaspoon ground nutmeg

  • 1/8

    teaspoon ground cloves

  • 1 1/4

    teaspoon baking powder

  • 1

    teaspoon baking soda

  • 1/2

    teaspoon salt

  • 1 1/2

    cups white granulated sugar

  • 1/2

    cup brown sugar

  • 4

    large eggs, at room temperature

  • 1 1/2

    cup canola oil

  • 5-6

    grated carrots(about 1 lb)

  • Cream Cheese frosting:

  • 1

    block and 1/2 block cream cheese

  • 1

    stick of butter, at room temperature

  • 1

    teaspoon vanilla extract

  • 3 1/2

    cups powdered sugar

  • Bake at 350F for 20-24 minutes
