STRAWBERRY & WHITE CHOCOLATE MUFFINS

Ingredients

  • 2 cups flour
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 large eggs, room temperature
  • 1 cup buttermilk
  • 1/3 cup canola oil
  • 1 tsp vanilla extract
  • 1 1/3 cups fresh strawberries, chopped
  • 1/2 - 3/4 white or regular chocolate chips (optional)

Preparation

Step 1

Preheat oven to 400F. Line your muffin pan with paper cups. In a large mixing bowl, mix all the dry ingredients together. Set aside.

In another bowl, whisk the eggs together until combined. Add the rest of the wet ingredients (buttermilk, oil and vanilla) and mix together.

Pour the wet ingredients into the dry ingredients. Mix. Use a spatula or whisk to fold in the flour. The batter will be fairly. Fold in the berries and the chocolate chips.

Divide evenly among the 12 muffin cups (use an ice cream scoop for this). Bake about 16-20 minutes or until a tester comes out clean.

Remove from the oven and after 5-8 minutes, transfer to a wire rack to cool completely.
