Baked Burritos

Ingredients

  • 8 flour tortillas, 10 inch
  • 1 lb. extra lean ground beef, (97% Lean)
  • 4 ounces cheddar cheese, lowfat, shredded
  • 1/4 cup scallions, chopped
  • Mexican Sauce
  • 8 ounces tomato sauce
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • 1/8 teaspoon cayenne
  • 1 tablespoon lemon juice
  • 1 tablespoon sugar

Preparation

Step 1

Brown and drain the ground beef. Meanwhile, shred the cheese and chop the onions. mix the sauce ingredients together and pour over drained beef stirring to mix. Place 1/2 cup beef in each tortilla, fold and place seem side down on a baking sheet. Top with cheese and scallions. Bake 15 minutes at 350.

Serving Ideas : Serve with lettuce and tomatoes, & Tex-Mex Slaw

NOTES : These burritos freeze well on sheets or in baking dishes.
