Ingredients
- 2 pork tenderloins
- 3 tbs evoo
- 1 1/2 tsp sea salt
- 7 cloves garlic, minced
- 1/3 c chopped fresh basil
- 1/3 c chopped fresh thyme
- 1/3 c chopped fresh parsley
- 2 tbs coarsely ground pepper
- 1/4 c butter
- 1/3 c all purpose flour
- 2 (14 1/2oz)cans chicken broth
- 1 tbs tomato paste
- 2 tbs chopped fresh sage
- 1/4 tsp pepper
Preparation
Step 1
Rub pork w/ evoo and sprinkle with salt. Stir together garlic an next 4 ingredients; press onto pork. Place on lightly greased broiler pan lined with aluminum foil.
Bake at 350* for 1 hour or until meat thermometer reaches 160* Transfer to serving tray and pour pan drippings into a skillet.
Add butter,melt. Whisk in flour until smooth.Gradually whisk in broth and next 3 ingredients. Cook until mixture is thickened and bubbly (2-3 minutes) Serve with pork and potatoes.
