  • 1 cup grilled chicken
  • 1/2 cup alfredo sauce
  • 1/4 cup chopped cooked bacon
  • 1/2 to 1 cup mozzarella cheese
  • Ingredients for Gluten Free/Paleo Cracker Crust
  • 1 cup almond flour
  • 1 egg white
  • 1/8 tsp salt

Preparation

Step 1

Directions for Gluten Free/Paleo Cracker Crust
Preheat the oven to 325.
Combine all the ingredients until you form a dough.
Place dough on a piece of parchment paper and put another piece on top of that roll the dough out to about 1/8 inch thick or thinner if you want really crispy crackers.
Remove the top piece of parchment paper and place the bottom piece on a cookie sheet.
Bake for 8-10 minutes, the thinner the cracker, the less time you bake it for.
Keep an eye on it the first time you make them so you don’t over bake them. They should be golden brown.

Oven Method
Prepare the paleo cracker recipe
Bake the crust for 8 minutes
Remove from oven and pour the sauce over crust.
Add chicken and bacon
Sprinkle cheese over the chicken and bacon
Broil on high for 5 minutes or until the cheese is slightly golden.
Serve warm.

Grill Method
Heat Charcoal or gas grill no hotter than 425
Place a piece of tinfoil on the grill, put parchment paper with crust on top of the tinfoil
Grill for 5-8 minutes
Add sauce, chicken and bacon
Top with cheese
Grill an additional 5-8 minutes until cheese is melted
Remove from the grill, cut and serve.
