Ingredients

    Cup Quick Oats

  • Cups Boiling Water

  • ½

    Cup Shortening

  • 1

    Cup Brown Sugar

  • 1

    Cup White Sugar

  • 2

    Eggs

  • Cups Flour, sifted

  • 1

    tsp. Cinnamon

  • 1

    tsp. Baking Soda

  • ½

    tsp. Salt

  • Topping:

  • 6

    Tbs. Butter

  • ½

    Cup Brown Sugar

  • ¼

    Cup Milk

  • 1

    Cup Coconut

  • ½

    tsp. Vanilla

  • ½

    Cup Nuts, chopped (optional)

Directions

Soak oats in boiling water. Set aside to cool. Cream together shortening, sugars, and eggs. Add cooled oatmeal and mix well. Stir in flour, cinnamon, baking soda, and salt and mix well. Spoon into greased 9 x 13 inch pan. Bake at 350 degrees for 30-40 minutes. To prepare topping combine all ingredients except vanilla and nuts in a saucepan. Bring to a boil and cook until thickened, stirring frequently. Remove from heat immediately and fold in nuts and vanilla. Spread topping over warm cake. Broil at 500 degrees for 3-5 minutes.
