Daiquiri Cheesecake

Ingredients
- 2 C. graham cracker crumbs
- 3 Tbs. sugar
- 1/2 C. butter, melted
- 24 oz. cream cheese
- 3/4 C. sugr
- 5 tsp. cornstarch
- 4 eggs
- 1 egg yolk
- 1/4 C. light rum
- 1/2 C. frozen limeade concentrate, thawed
- 3 Tbs. lime juice
- 1/2 C. frozen limeade concentrate, thawed
- 4 tsp. cornstarch
- 4 tsp. sugar
- 1 Tbs. light rum
- 2 tsp. lime juice
- 1 tsp. finely shredded lime peel

Step 1
In a small bowl stir together crumbs and sugar. Add melted butter. Stir till well combined. Press crumb mixture evenly onto the bottom of a greased 9-inch springorm pan.
In a large bowl combine cream cheese, sugar, and cornstarch. Beat with an electric mixer till smooth. Add eggs and egg yolk, one at a time, beating well after each addition. Beat in rum, limeade concentrate, and lime juice. Pour the cream cheese mixture over the crust.
Bake at 350* for 15 minutes. Lower the temperature to 200* and bake for 1 hour and 10 minutes or till almost set. Run a knife around edge of cake and return to oven turned off for 30-60 minutes.
In a small saucepan stir together limeade concentrate, cornstarch, sugar, rum and lime juice. Cook and stir till thickened and bubbly. Cook and stir 2 minutes more. Rimoe from heat. Stir in lime peel. Pour over cheesecake.
