Asian Sesame Spiralized Carrots

Ingredients

  • 1 large carrot, peeled, Blade D, noodles trimmed
  • 2 teaspoons toasted sesame seeds
  • 1.5 tablespoons rice vinegar
  • 1 tablespoon sesame soil
  • 1 heaping teaspoon fresh ginger, peeled and grated
  • 1.5 teaspoons low-sodium soy sauce
  • 2 scallions, diced
  • freshly ground black pepper, to taste

Preparation

Step 1

1.Combine all of the ingredients into a large bowl and toss well. Let sit for 10 minutes in the refrigerator so that the carrots soften or serve immediately.
