Ingredients

  • 2 c fresh broccoli florets
  • 1 lb thin fresh green beans, trimmed & cut into 2 in pieces
  • 10 sm fresh mushrooms, halved
  • 8 fresh Brussels sprouts, halved
  • 2 med carrots, cut into 1/4 in pieces
  • 1 med onion, sliced
  • 3-5 garlic cloves, thinly sliced
  • 4 T EVOO, divided
  • 1/2 c grated Parmesan cheese
  • 3 T julienned fresh basil leaves, optional
  • 2 T minced fresh parsley
  • 2 T lemon juice
  • 1 T grated lemon peel
  • 1/4 t salt
  • 1/4 t pepper

Preparation

Step 1

Preheat oven to 425. Place first 7 ingredients in Lg bowl; drizzle with 2 T oil & toss to coat. Divide between two 15x10x1 in baking pans coated with cooking spray. Roast 20-25 min until tender, stirring occasionally.

Transfer to Lg serving bowl. In sm bowl mix remaining oil with remaining ingredients; add to veggies & toss to coat.
