Easy Chicken Divan

When you have leftover chicken.

Double recipe and make one to freeze. Makes a mess with cooking broccoli and using food processor.

Ingredients

  • 1 20 oz package frozen broccoli
  • 1/2 c buttermilk
  • 1 c cottage cheese
  • 2 tsp. lemon juice
  • 1/2 tsp curry powder (optional)
  • 1 can cream of chicken soup
  • 2 c cooked brown rice
  • 2 c cooked chicken
  • 2 slices whole wheat bread
  • 2 Tbsp parmesan cheese

Preparation

Step 1

Preheat oven to 350. Slightly cook broccoli. Drain.

Place bread and cheese in a blender and pulse to mix. Put in a bowl and set aside.

Place buttermilk, cottage cheese, lemon juice, and curry in a blender. Blend until smooth. Add cream of chicken soup. In a large baking dish, layer half of soup mix, rice, broccoli and chicken. Add remaining soup mix. Sprinkle bread mix over top.

Cover and bake at 350 for 30 minutes. Uncover and bake 5 minutes more until bubbly.
