Ingredients

  • 1/2 c butter
  • 1/2 c chopped shallots
  • 1/2 c all purpose flour
  • 1/2 c dry white wine
  • 5 1/2 c chicken or turkey broth
  • 2 T Dijon mustard
  • 2 t minced fresh thyme

Preparation

Step 1

In Lg skillet melt butter over med heat. Add shallots; cook, stirring frequently for 8 min. Whisk in flour & cook whisking constantly for 5 min until flour is a light caramel color. Whisk in wine & cook for 1 min. Whisk in broth & bring to boil. Reduce heat & simmer, whisking occassinally, for 6 min; whisk in mustard & thyme. Serve immediately.
