Red Plum Cake

  • Icing:
  • 2 c. flour
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 2 c. vegetable oil
  • 2 sm. jars plum baby food
  • 2 c. sugar
  • 1 tsp. cinnamon (opt.)
  • 1/2 tsp. ground cloves
  • 1/3 oz. red food coloring
  • 3 eggs
  • 1 c. chopped pecans or walnuts
  • 1 c. powdered sugar
  • 2 to 3 tsp. lemon juice

Preparation

Step 1

Mix together flour, soda, salt, oil, baby food, sugar, cinnamon cloves, food coloring and eggs. Mix on medium speed of electric mixer for 5 minutes. Add nuts and mix well. Bake at 300 degrees for 1 hour and 10 minutes in bundt cake pan. Mix powdered sugar and lemon juice together. Pour over warm to hot cake.
