Oatmeal Cake

  • Icing:
  • 1 1/2 c. boiling water
  • 1 c. quick-cooking Quaker Oats
  • 1 stick oleo
  • 1 c. brown sugar
  • 1 c. white sugar
  • 2 eggs
  • 1 1/2 c. flour
  • 1 tsp. cinnamon
  • 1 tsp. soda
  • 1/2 tsp. salt
  • 1 stick oleo
  • 1/2 c. Milnot
  • 1 1/2 c. coconut
  • 1 c. chopped nuts
  • 1 tsp. vanilla
  • 1 c. brown sugar

Preparation

Step 1

In a pan, boil water, then mix in quick-cooking Quaker Oats. Set aside to cool. Mix together oleo, white sugar, brown sugar, soda, salt, cinnamon and eggs. Mix well. Add mixture of water and oats. Add flour and blend well. Pour into greased 9 x 12-inch pan and bake for 1/2 hour at oven setting of 350 degrees. when done, spread with icing prepared while cake is cooking. Bring to a boil in saucepan the oleo, brown sugar and Milnot. Remove from heat; add vanilla, coconut and nuts. Stir well. Pour over baked cake. Cake need not be cooled. Should icing separate before cake gets done, reheat and pour on cake.
