Ingredients

  • 1-2 tsp chili powder (more if you like it spicy)
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 1 cup onion, chopped
  • 2 bell peppers, chopped (green, red, orange, yellow - whatever you like)
  • 12 oz. shrimp, raw
  • 4 whole wheat tortillas

Preparation

Step 1

1. Cut onion and peppers into thin strips.
2. Chop garlic.
3. Coat skillet with olive oil and heat on med-high.
4. Add the shrimp, onions, green and red peppers and garlic for about 5 minutes or until shrimp is opaque and veggies are tender, stirring frequently.
5. Stir in chili powder and cook for 1 minute.
6. Warm tortillas in microwave for 30 seconds.
7. Spoon fajita mixture over tortilla and top with salsa.
