Ingredients

    lb extra lean beef (95% lean)

  • 2

    cans (8 ozs each) no salt added tomato sauce

  • 15 oz can black beans, rinsed & drained

  • 1

    c frozen corn

  • 4 oz can chopped green chilies

  • 2

    T dried minced onion

  • 2

    T chili powder

  • 1

    t ground cumin

  • ½

    t garlic powder

  • ½

    t dried oregano

  • 6

    whole wheat tortillas (8 in each)

  • 4

    ozs shredded cheddar cheese

Directions

In Lg skillet cook beef over med heat until no longer pink. Stir in tomato sauce, beans, corn, green chilies, onion, chili powder, cumin, garlic powder & oregano; heat through. In an 11x7 in baking dish coated with cooking spray, layer half of the tortillas, beef mixture & cheese. Repeat layers. Bake uncovered at 350 for 25-30 min until bubbly. Freeze option: Cool unbaked casserole; cover & freeze. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 min before baking. Preheat oven to 350. Bake casserole as directed, increasing time as needed to heat through & for thermometer inserted in center to read 165.
