Cake Sweet Lime or Lemon Curd

  • 3/4 cup sugar
  • 1/4 cup cornstarch
  • 1 cup water
  • 2 large egg yolks, lightly beaten
  • 2 Tbsp butter
  • 1 Tbsp lime or lemon zest
  • 5 Tbsp fresh lime or lemon juice



Step 1

Combine the sugar and cornstarch in sauce pan. Gradually whisk in the water. Place over medium heat and cook stirring constantly until it thickens and comes to a boil, about 3-4 minutes. Boil, stirring for 1 minute more. Remove from heat and spoon a small amount into the egg yolks and stir to combine. Stirring constantly turn the egg mixture into the pan and return the pan to medium heat. Stir until the curd is thickened and lemon colored, 1-2 minutes. Remove from heat and stir in butter, zest and juice. Cool.

Makes enough for middle layer of 2 layer cake
