Foil Baked Chicken

Ingredients

  • 6 boneless, skinless chicken thighs
  • 1/2 cup cornstarch
  • 1/4 cup kikkoman soy sauce
  • 1/4 cup kikkoman hoisin sauce
  • 1/4 cup brown sugar, packed
  • 1/4 cup chopped cilantro
  • 2 tbsp ginger, minced
  • 2 cloves garlic, minced
  • 18 (12-inch square) pieces of aluminum foil

Preparation

Step 1

1. Cut chicken into 1-inch-square pieces.
2. In a mixing bowl, combine all other ingredients.
3. Add chicken and toss to coat. Cover and refrigerate for at least 30 min.
4. Heat oven to 400 degrees. Fold each piece of foil in half twice to make 6-in squares.
5. Place a spoonful of chicken in the center of each piece of foil, dividing it equally. Fold foil squares diagonally, folding edges to seal.
6. Place on a nonstick baking sheet and bake for 20 min, or until chicken is no longer pink in the center.
