CRAB****Crab Quesadillas

Very good for both (had as a lunch). Dan had salsa with his - PC corn and black bean. I planned to have sour cream and lime with mine but didn't have any sour cream, so I used 1% yogurt which worked just as well (with less sat. fat). I used a cheaper brand of crabmeat but if making these again, go for the good stuff - PC brand - it's worth it for the flavour.

Ingredients
- 1 OZ. PC Southwest Blend
- 1 1/2 oz. Light cream cheese, at room temp
- 2 scallions, minced
- 1/4 medium red or yellow pepper, minced
- 1 can crabmeat, drained
- 4 Weight Watchers whole wheat tortillas
- 3 dashes chipotle tabasco sauce

Preparation
Step 1
* Combine Cheddar, cream cheese, scallions, bell pepper, cilantro, jalapenos (if using), (optional lime or lemon zest and juice) along with tabasco in a medium bowl and mix well. Gently stir in crab. Lay tortilla out on a work surface. Spread the filling on top and top with remaining tortilla.
* Heat cooking spray in a large nonstick skillet over medium heat. Place quesadilla in the pan and cook, turning once, until golden on both sides, 3 to 4 minutes total. Transfer to a cutting board cut into 8 wedges.
