Ingredients
- 1/2 c. cranberries, ground up
- 1 lg. banana, diced
- 1/2 c. sugar
- 2 c. vanilla wafers, crushed
- 6 T. butter, melted
- 1/2 c. butter, softened
- 1 c. sugar
- 2 eggs
- 1/2 c. nuts, chopped
- 1 c. whipping cream, whipped OR 1 c. Cool Whip
Preparation
Step 1
Combine cranberries, banana and 1/2 cup sugar. Set aside. Combine vanilla wafers and 6 tablespoons butte. Press 1/2 of this mixutre into a 9 x 9 x 2-inch pan. Cream 1/2 cup butter and 1 cup sugar until light. Add eggs and beat until fluffy. Fold in nuts. Spread over crumb mixture. Top with cranberry mixture. Whip whipping cream until soft peaks form and spread on top. Sprinkle with remaining crumb mixutre. Chill for 6 hours or overnight.
