Ingredients
- Crust:
- 2 c. graham crakcer crumbs
- 1 stick diet stick margarine
- Orange Filling:
- 1 c. orange juice
- 1 env. unflavored gelatin
- 12 oz. low-calorie cream cheese (neufchatel), softened
- 2 med. oranges, peeled and seeded (about 1 c.)
- 1 c. part skim ricotta cheese
- 1/2 c. skim milk
- 18 packets Equal
- 1 packet low calorie whipped topping mix
Preparation
Step 1
Spray a 9-inch pan with Pam. Blend crust ingredients and press over bottom and sides of pan. Bake at 350 degrees for 8 to 10 minutes. Cool. Pour orange juice in pan. Sprinkle gelatin over it and let it soften for 1 minute. Heat, stirring about 3 minutes. Blend cream cheese and ricotta cheese until smooth. Stir in Equal. Add gelatin mixture to cheese mixture. Blend. Prepare topping according to directions, substituting skim milk for water. fold topping into cheese mixture. Stir in oranges. Spoon into crust. Chill. Garnish with orange sections. This is better if you can make it a day ahead as it asorbs the orange flavor better.
